The Nashville Crunch-Smash is a flavorful chicken burger featuring a unique "shatter-crust" of panko and Parmesan, infused with spicy Nashville hot oil, and topped with tangy coleslaw and pickles, all nestled in a toasted brioche bun.
1. In a small heat-proof pot on the corner of your griddle, whisk together the butter/oil, cayenne, brown sugar, and smoked paprika. Let it sit in the warm zone so the flavors meld into a vibrant red oil.
2. Mix the ground chicken with the mayo and seasonings. Form into 4 round balls.
3. On a medium-high griddle, place 4 small piles of your Panko/Parmesan mix. Place a chicken ball directly on each pile and smash firmly with your press. The crumbs will embed into the meat, frying in the rendered fat to create a 'shatter-crust.'
4. Once the bottom is dark gold and crispy (about 3-4 minutes), flip the patties. Immediately brush the crunchy side with your Nashville Hot Oil.
5. Spread mayo on your buns and toast your brioche buns until dark gold.
6. Assemble the burger: Layer Bottom bun, Pickles, Crunch-Smash Patty, Vinegar Slaw, Top Bun.
